Cucumber Raita Recipe

Serving Size: 6-8

Ingredients

1 English Cucumber

1 Cup of Greek Yogurt

1 Small Tomato

1/4 Teaspoon of Cumin

1/4 Teaspoon of Chili Powder

1 Tablespoon of Lemon Juice

Salt and Pepper to Taste (1/8th Teaspoon)

A Pinch of Sugar

Preparation

Get all those ingredients out and let’s do this! Start with your cucumber, peel it and grate or slice it extremely thin so it can mix well without being to clumpy.

Wrap it up in some paper towels to get all of that moisture out, give it a squeeze if it’s really juicy. Sit that aside and lets keep moving.

Now go ahead and dice up that tomato nice and small. Believe it or not you’re already close to finished!

Grab yourself a mixing bowl and toss all your other ingredients into it starting with the yogurt so all the goodness can stick to the top of it. Mix all of that up until it’s nice and smooth.

Finally take your cucumber and tomato and add it in to mix thoroughly. Once you’ve completed that step simply cover and place it in your refrigerator to chill out for about a hour or if you don’t want to wait, just dig in and enjoy!

There you have it, a simple and quick Cucumber Raita recipe.
